INGREDIENTS

1 head cauliflower, whole
1/2 cup fresh lemon juice
1/3 cup Dijon mustard
1/2 cup grated Parmesan
3/4 cup panko breadcrumbs

DIRECTIONS

Preheat oven to 350ºF. Steam whole head of cauliflower until al dente, with just a touch of a bite left. Mix lemon juice and mustard together and spread mixture over steamed cauliflower; mix Parmesan and panko together and spread over cauliflower. Bake in oven until golden brown, 5 to 8 minutes. Serve as a wedge, with steamed green beans with almonds over sliced roasted beets.
